Go to Kanazawa, in Ishikawa Prefecture in Japan. In the fish market you will find the best sashimi in the world. Tai, ika, ikura, toro...nothing comes close. Or go to Tsukiji market in Tokyo for the same thing but 12 hours less fresh, in a crowded setting and you have to hunt for the good stuff.

Pulpo a la Gallega. Basically, its just cooked Octopus with some spicy pepper, coarse sea salt and olive oil, but that shit is delicious.

Southern Italy (preferably Puglia) - Swordfish (Pesce Spada)

Portugal - Bacalao

Salmon in Northern Europe can be alright but isn't as good as some other places in my opinion.

Haven't tried the far east or Japan.

Europe: Northern Spain (Galicia), Swedish oysters from the the North West Coast, Southern Italy.

North America: British Columbia (or Alaskan) Sockeye, Halibut, Lingcod, stone Crab, Alaskan King crab. Florida Stone Crab. Mexican swordfish.

Asia: Japan (anything fresh, except whale sperm).

I have never been to Hawaii but I hear they have some amazing fish.

I am also a glutton with Mackerel, Cod, Greyling, Steelhead, Pacific oysters (miyagi, kumamoto, and Pacific), Albacore Tuna.

Grilled Bream with cooked chard (or rice or potatoes), sprinkled with some olive oil and parsley. Traditional Dalmatian recipe.

Then fried or cooked, marinated squid or shrimp (Spanish, tapas).

Then Sushi or Sashimi (Japan, but also most urban centers all around the world).

Then... well, that's plenty for now.

Best I've had was probably in Follonica. Grilled swordfish, "zuppa di crostacea" (crustacean soup), octopus.

The seafood vendor I use is a Japanese company. They can get me pretty much the best of anything I want. Fish flown in all over the world; Japanese, mediterannean, you name it, a day after the fish was caught. It's just pricey.

Mackerel-grilled with a sweet and sour agrodolce
Halibut, slow poached in butter or olive oil, with some fresh shelling beans and fines herbes
Seabass, grilled or pan roasted, with some chorizo, fennel, and potatoes
Salmon, wild is great but there's an amazing farmed product coming out of New Zealand right now. Puts the scottish stuff to shame. Pan roast that and serve with some salsa verde and red wine stewed lentils.
Live spot prawns, can get these all over the west coast of the U.S. or Alaska. Eat em raw and fry the heads.
West coast abalone. Awesome product. Sashimi style with a little grated yuzu or sudachi zest
Sea urchin roe, popped right out of the live sea urchin, serve it on really fresh bread with a squeeze of lemon, salt, cracked pepper and olive oil
Mussels, steamed with white wine, saffron, and cream
Oysters, preferably Kusshi or Beau Soleil, with a squeeze of lemon and freshly grated horseradish. If I'm drunk I like em with old school cocktail sauce

Any and all sushi. Huge sucker for tuna. Hamachi, Kampachi, you name it. Needlefish (sayori) halibut cheeks, scallops from hokkaido.

I fucking love seafood.

I eat sushi from two of [Iron Chef] Masaharu Morimoto's protogés most days of the week. The sushi and sashimi is top notch, IMO.

There is a little place in Tulum, Mexico called El Camello. its in the outskirts of the town, next to the highway and ram packed everyday.
Most remarkable seafood soup Ive ever had. Just a profound, rich experience. Subtle yet powerful. Superb stuff, and remarkably good prices. Their ceviche is not half bad either, rather distinct.

Mie, Japan also has gorgeous seafood. Local restaurants will set you up with a feast for not a lot of money, they are trying to develop the place as a good food destination, and I can see why, stellar stuff. The local specialty is some kind of giant shrimp, simply prepared (grilled). Amazing too.

Also Japan, if you can indulge in the crab town. I cant remember the name, but you get there by taking a little train up the mountains from Kyoto, so north coast of Japan. its heavily advertised in the tourism magazines, thought you might need a local to set you up. The local hotels do by day pre-fix lunch menus featuring crab in 5 or 6 different ways. Not cheap, but by god, they know how to prepare it.

In Rosarito Baja California, Mexico the only redeeming thing of the whole peninsula I tried was the fish tacos. Man, just perfect morsels of food. Gives me a boner just to think about them. Avoid Tijuana, one sad city.

Chengdu, China has also surprising good fresh water fish, since its landlocked. There is a species of septentrionalis that is stunning in hotpot. I could eat that stuff everyday.

Toronto, center of the universe I reccommend the jerk crab at Rock Lobster. Fan fucking tastic, makes you want more and more. Sweet, salty, spicy, a little earthy. Really great dish, michellin star quality for not a lot of $$.

Also, oysters fresh from the ocean, anywhere. A squeeze of lemon, a gallon of local white wine, and then a trip to humptown ftw.

Best seafood in the world ( by far) is found in peru. There are so many differernt dishes to try. My favorites are ceviche and chupe de camarones.

In europe the seafood fucking blows. The shrimp here is tastelss and always has the consistency of rubber...but i guess ive been spoiled from peru. i honestly have not had one dish here that even comes close to those of peru. Havent made it to southern italy yet though

You gotta be joking. Toronto has some of the worst fish around. We have a hard time getting any good sourcing for good fresh stuff, It just does not come around here as quick as it should.

Sushi is a great example for this. Toronto Sushi even at the high-end gets a bad rap. The low end stuff is dog food but edible and cheap, but even high-end stuff is no better then the stuff you can get from random street shops in Vancouver. The best Sushi I have eaten in my life was from a random small shop in Vancouver, mind you I have only eaten Sushi in a few places (Edmonton, Calgary, Toronto, Vancouver, NYC) and I am no big spender with food but for a mid-range meal Vancouver stuff was legit quality wise. Vancouver blows Toronto away with seafood as they have legit sourcing from great points in Asia and the West Cost. The Maritimes will give you the best lobster on earth, and they have some great mussels too.
