RE: Eggs
Just bought 36 organic eggs. Only way I can cook them (in my dorm room) is with a microwave.

Anybody ever cook eggs in the microwave? tips?

I was thinking crack 3 into a coffee mug, add a little water and ghee/coconut oil. Mix, cover, cook for a minute or less to leave runny.

RE: Eggs
I think that would work. You could also boil some salted water and poach them.

A lot of organic eggs are not worth it IMO. The better eggs are going to be marked as free-range or cage-free but most supermarket eggs aren't great.

The best eggs are going to come from a farmer's market, your neighbor's chickens or your own backyard chickens (assuming those last two exist). Look for eggs from chickens that can roam around and eat bugs, not just feed. You can tell how good an egg is by the yolk. It should be dark orange in color and firm. Typical supermarket egg yolks are yellow and flimsy.

If only you knew how bad things really are.

RE: Eggs
Spider, mix your eggs with a fork and add whatever you want to create a smooth consistency. This will make it cook evenly in the microwave.

Don't dorms have communal kitchens? You could possibly borrow a pan from an RA or someone who cooks in the kitchen.

Peanut butter + jam on wheat bread
An orange

Was wondering whether eating raw eggs was safe. I was told that raw eggs contain salmonella and was wondering how to avoid this apart from cooking it. I read on here that raw eggs greatly raises sex drive.

RE: Eggs
If your buying quality eggs you will be fine.

I'm convinced a lot of people eat eggs with hairline cracks in them and though I'm just just speculating I imagine that's where most of the sicknesses come from. Any egg I eat I inspect, any sign of even a small hairline crack I toss it. Good quality eggs aren't old as dust, nor do they have weak shells that prone them crackage.

It's only the yolks you can eat raw, the whites have a anti-nutrient in them and its not good to ingest them raw.

Agian though only do it with top quality eggs.

Kosko: If we are eating our eggs runny, then sometimes both the yolk and the white are runny. Does it take vary much heat to correct this anti-nutrient? I may need to look into this further as well b/c I thought raw eggs were pretty good, and that the salmonella danger was over hyped. In that regard, your inspection of the eggs should be helpful, too.

When drinking raw yolks I just save the whites and then mix them in with other eggs when I make scrambled eggs or omelets.

RE: Eggs
What I had for breakfast this morning:

1 tortilla
1 egg fried
1 slice cheese
sour cream
guacamole
Texas Pete

I put butter in the skillet then added a bit of prepared garlic. Added the eggs and busted the yolks. Flipped and just before done, I added the cheese. Throw on a warm tortilla and top with sour cream, guac, and hot sauce. I didn't add salsa cause I ain't got none.

I ate 2, which is breakfast under a buck, and took about 10 minutes, from start to cleanup.

Paleo friendly version:

Not really. Paleo is gay.

RE: Eggs
Actually, just use a sprouted corn tortilla fried in lard, yogurt or crema instead of sour cream, and it's "paleo" enough... would probably taste even better, too. Looks good, but I think it could also use some green onions on top.

RE: Eggs
I eat 6-10 eggs a day (protein up, bro).

At my last health assessment for insurance purposes, my bad cholesterol was so low it didn't even register on the test.

Dietary cholesterol is good for you. Your body uses it to make testosterone while you sleep. Your cells would literally fall apart without it.

Don't be afraid to egg up. It's cheap and easy. Experiment with different spices and salsas and preparations to keep it from getting boring. Super easy.

You're shortchanging yourself removing that yolk.

And realize that not all cholesterol is bad. HDL cholesterol is good and you want as much of that as possible.

Hard boil a lot of eggs, and keep em in the fridge. Fast and easy, plus you can just pop the yolk out if you don't eat the yolk.

Actually Nascimento, I will go one step further to suggest that people are delusional if they believe that eating egg whites without the yolk is good for them.

And, I am not blaming anyone for being delusional (so nothing specifically against California Supreme or anyone else on this thread who have been touting some kind of benefit in taking out the yolks) b/c it is really sad that we believe that propaganda.

I believed the same thing up until a couple of years ago, and the reason that i believed eating egg yolks was bad was not based on any science or anything but instead b/c I kept hearing it over and over again in mainstream channels - including the govt., medical establishment and nutritional gurus saying that crap. .. which if we keep hearing it by what seems to be credible sources, we begin to believe it.

We've been sold a bill of goods to be told that there is some kind of benefit in eating eggs without the yolks, and once we study into the details, we realize that we have been taken for a ride... and ultimately, if we really think about it, it does not make any sense to separate the whites from the yolks.

I know that not all guys on this forum are going to come to the same conclusion as me and stop removing the yolks from their eggs. Nonetheless, I would be interested to see any kind of actual convincing study that shows some kind of benefit in removing yolks from eggs. I know we can find a lot of pundits telling us to remove the yolks, but if I see a pundit coming to that conclusion to remove yolks that is based on real scientifically convincing double blind study data, i will be shocked.

Cal_Sup: Certainly, i am no doctor and you have to make your own choices about how to proceed with your life and your diet, but i would predict that your cholesterol may be messed up b/c you are not eating enough fat in your diet. You are also not citing the right cholesterol test. LDL is a fabrication of drug companies to make money and it is not correlated with negative heart results, such as heart disease.

The easiest two numbers to look at in a regular cholesterol panel is the HDL and Triglycerides.

Those should have less than 2 to 1 ratio. So if HDL is 40, then triglycerides should be less than 80. LDL does not matter, and who cares... only doctors, insurance companies and drug companies care about LDL b/c LDL levels has become one of the standards of care to sell you statin drugs... and doctors are forced to follow the standards of care... with the risk of being sued if they do not.

There are several authors that point out this cholesterol myth. A good recent book would be Jimmy Moore's Cholesterol Clarity, and Gary Taub also points this out pretty well in his book why we get fat and what to do about it.

Scramble, half power for a minute, mix again, half power for 40 seconds, 30, 20, 10, etc. The goal is to stop it when its just the right consistancy.

Look at the eggs, if they all look the same the chickens are being fed the same thing. Good eggs will taste great, and won't look the same.

RE: Eggs
I read through this whole thread about eggs, and I cannot recall exactly where I saw the information; however, one of the RVF posters had written that the raw whites of eggs are not good for a guy unless those whites are are slightly cooked.

In that regard, I just did a little further research, and I came across a Dr. Mercola article (linked below), and i see that he found that it is ok to eat the whole egg (not just the egg whites).

If a guy just eats the egg whites then he may get a biotin deficiency; however, the yolks have a lot of biotin in them, so the white and the yolks balance each other out when eaten together. Another reason to be eating whole foods rather than trying to parse out parts we like and/or don't like.

Going to scramble 3 tomorrow morning. I'm also considering trying them out raw in a couple days.

RE: Eggs
I just discovered yolk scrambled eggs. So for every say 4 eggs, you cook only the yolks for 2-4 of them. Provided you don't overcook it, it comes out very creamy and rich. I cook the whites separately and eat them grudgingly... Highly recommend. It's kind of funny, because in hard-boiled eggs, the yolk is the least tasty part.

Also, I've found kimchi to be the hands down best accompaniment to hard boiled eggs. Slice the hard boiled egg into halves or thirds and top it with a thick piece of fermented cabbage. A delight.

Eggs are a superfood. Watch how the little artic fox on National Geographic dodges and dives around massive seabirds with beaks like meat cleavers just to snatch an egg. They know bro, they know.
