I don't really understand how you come to $30 per croissant if the minimum wage is raised to $15.

I'm not a baker either, so I really don't know if it takes more than an hour to make a single croissant.

In the restaurant industry, labor is about 30% of input costs. It's probably about the same in bakeries, or a bit less because it's self serve/counter service with no waiters, maybe 25%. I agree that he shouldn't have said it that way (only because people are so damn thick skulled), but AOC's complete lack of awareness of WHY the croissant costs that much should absolutely be pointed out.
