In the restaurant industry, labor is about 30% of input costs. It's probably about the same in bakeries, or a bit less because it's self serve/counter service with no waiters, maybe 25%. So let's say wages double from $7.50 to $15.00, you'd have to raise the price of a $3.00 croissant by $0.75 to $3.75 to make up that increase, roughly. If wages go up from $12 to $15, then the price increase would only be by $0.75x(15/12)=$0.19. You will cover the raise from $12 to $15 by charging $3.20 for a $3.00 croissant.
Airport businesses charge more because they have higher rents (exclusivity deal) and less competition, and have a captive audience, similar to ballpark stalls. Monopolies in a segmented market that cannot price discriminate are going to cater to the wealthier segment. So in places like NYC where there are millions of wealthy business travelers, it makes sense to gouge.
