American BBQ might be my favorite, big fan of good meat and good bbq sauce.

Japanese 2nd.

Mexican and Tex Mex 3rd.

Cuban/Dominican 4th.

5th more traditional soul food.

6th would probably be Italian/Neapolitan - though I eat Italian the most frequently.

Should be discussed whether or not you've actually been to the country of origin.

My current preferences:

1. Japanese
2. Korean
3. Thai
4. Chinese
5. Vietnamese
6. Mexican (I inhale tacos)
7. It's hard to discuss Middle Eastern cooking, there are some striking similarities as well as differences between Turkish, Lebanese, and Greek. But they're all 3 really delicious.
8. I'd put western European countries pretty close to the bottom of my list presently. I like Spanish and French food depending on the region of origin, I just don't crave it ever.

To the Frenchy above; there's nothing particularly innovative about using pork fat/butter/olive oil in cooking. At the end of the day Western European cooking is still fat based cooking. I consider Japanese cooking far more innovative for using fat based cooking AND water based cooking in the form of dashi.

Pad Thai in Thailand is pretty damn bland.

You can't tell me that isaan cooking is overrated. Go eat crispy rice salad with fermented pork and tell me it's overrated. The food is exploding with flavor and highly addictive.

Thai and vietnamese - vietnamese because it has so much herbs in it, barely cooked, or just simply added to main meal, there is rule - minimum 3 herbs (herbs, not just vegetables) to the meal.
Thai because has added spicy component to above.

The best is definitely raw food, add it to any cuisine, you will be superhealthy and energized man.

Huh??? This is an exact reflection of the history of France and its european conquests and why its one if the most diverse cuisine in the world. Every region is different. It is not the method itself, but how it led to the most diverse regional cuisine in Europe.

I get the point perfectly well, you think that utilizing different fats is somehow innovative, and I'm telling you that it's not.

Your point that French food is regional is also redundant. I could also say the same thing about Italian, Spanish, Turkish, Mexican, Thai, and even American cuisine. I get it; cuisine differs greatly from Toulouse, Marseille, Lyon, Bordeaux, Brittany...but these same regional differences occur as much if not more so in other countries, particularly China. Each of these French regions produce dozens if not hundreds of different types of cheeses and charcuterie, but at the end of the day it's still just cheese and charcuterie.

Your point that French food being diverse is squarely wrong. Nowhere on Earth is food more diverse than in the U.S. You can find damn near every cuisine represented in L.A., S.F., or NYC. In Paris you've got a handful of Japanese restaurants, that one Falafel place that everyone freaks out about (that isn't that great) and that one Banh Mi restaurant the size of a shoebox. This "diversity" doesn't hold a candle to what we have in American cities.

And fuck diversity anyway. I say own your "French-ness". There's nothing wrong with it and French food is good for the most part. Nothing beats an unpasteurized Tomme de Montagne from the Pyrenees. However I'll tell you this: It's easy to find bad food in France. I can't say the same thing about Japan.

Tomorrow I'm going to provide you my point of view on the matter (solely about France)...but I don't think you know well France if you think it is not as diverse or that it is less than in the USA. There's more than 2000 years of history there with unique type of terroir...even most vines were planted by Romans. Americans imported their ethnic cuisine...Frenchmen mastered their soils, their territories and all of what they have is theirs or conquered and implemented in their repertoire. You'd need a whole lifetime to completely explore what France has to offer.
And on top of that, less hormones that what is used for american production.

I completely agree that japanese food is a delight, but there is bad japanese food too, just as there are bad kebabs in France and cheap bistrots or restaurants for tourists in Paris. But I'm still pretty sure a lot of japanese also come to France solely for food because its different from their cuisine...its just a matter of tastes. I love Japanese food...but at the end I still prefer French food and its worldclass wine, that every winemaking country in the world tried to mimic in term of production, methods, preparation and geographical attribution (looking at you Italy).

And I am not French but thanks for your mistake.

My opinion will always be biased and no matter what, our opinions are influenced by our tastes and surely reflect the quantity of cuisines one can find in their one country. Nevertheless, I think that to have a rigorous opinion about cuisines, one should experience them in the respective countries. I'm sure the idea I have about chinese cuisine only represents 5% of what is chinese food. Sometimes, the best cuisines are the least represented abroad.

1.Portugal
2.Greece
3.Italy
4.Japanese
5.French
6.Turkish
7.Brazil
8.Mexican

I will also mention the typical barbecue tradition of South America in countries like Brazil, Uruguay and Argentina. One should go there and try the assado or the rodízio once in a lifetime at least.
I will also mention my curiosity about Lebanese, Iranian and Peruvian Cuisine, as I've heard marvelous things about it.

China has regional variations in cuisine I find impressive.

Japan has the best approach to flavour and taste development in dishes..

France has the most diversity in being blessed with good climate and soil to grow and catch varied ingredients.

North Africa has bold and clean flavours.

Persian food has the most clean flavours I find after Japanese.

I like the freshness if Vietnamese food from the herbs.

I've never been to Thailand, but I hate Thai food, but this is likely because I've eaten western stuff versus the source. This food us always missing "something" it annoys my younger as dishes taste incomplete I find. Pad Thai is gross. I just tossed gas on it.. Come at me.

I've never been outside the U.S. except for Guatemala. Let me tell you, the Guatemalan interpretation of Chinese cuisine greatly differs from the American school of fine Oriental dining. Would you ever expect to see shark fin soup in a chain restaurant in a country where people on normal occasions eat beans and tortillas for breakfast, lunch, and dinner?

It was a lot of soup, too. For the equivalent of ten American dollars, I couldn't even finish the bowl. The Jasmine tea was good, too.
