I think you are making things harder for yourself by not telling them your name. Just tell them a fake name. Tell them anything they want to know about you but lie or be ambiguous. If she wants you to meet the family agree but come up with an excuse.

"I see what you're saying." <-- why would you agree with their batshit crazy texts?
"Maybe you're right" <-- same as above
Always use emoji to lighten the texting

It is ok to wait an hour or more to respond.
When you finally reply you don't need to respond to her later crazy texts. Just respond to her first text before she went crazy. This resets the conversation to the baseline.
