I've been thinking Japan or Scandinavia, and the tickets are running about 1500$ round trip, which leaves me about 500$ for 7 days.

I think $2000 would cover everything and you can squeeze it in your 2 week allocation.

You can get round trip tickets to both Asia and Scandinavia for well less than $1,500, especially flying out of LAX. More like 1/2 or 2/3 that price.

Id stick with the Americas due to your budget... Head down south... you should be able to get a flight for well under 1k to quite a few major cities in Latin America from LA.
