I have been an older women fan all my life. Ok, so there are a few basic things to you should know beforehand:
1. A few of the older woman are simply NOT open to dating younger men at all.
2. Some are open to it, and the best case of that are the ones who have a defined preference for younger guys.
3. The ones that are open generally won't mess around with someone under 21 or someone 25 depending upon how open they are, so the older (younger guy) you are the better. After that, if they reply back positively or semi positively(which would need just a bit more selling from you), you proceed accordingly. For instance, if they say "yeah i agree age is just a number, what do you think" you reply back saying "yeah i totally agree as well, its more about connecting on mental planes and mutual chemistry blah blah. my last gf of 2 years is 42 and that convinced me blah blah". Just make sure you use a couple of heavy words, correct grammar and punctuation and that would be enough to convince her that you're too mature for your age. Basically, you just have to make them realize you're not some rowdy jock with no direction in life. Also, when you're fluffing around on emails like asking "how was your weekend etc", always tell them how you've been busy doing a variety of things(and this is a very basic pickup advice I believe). After 2-3 email exchanges either they'll offer you the number or you ask them. Usually milfs/cougars are straight shooters and don't like to waste time, but there might be cases who would want to proceed on IM/skype instead of phone but that doesn't mean they want to waste your time forever. Obviously, you can choose whether or not to proceed based upon your options and time. I have an upper age limit of 45, but I do stretch it a little at times when the woman is hot.

Another thing to keep in mind is that you shouldn't get intimidated by looking at her pics or any other details in her profile. In alot of cases, I would think looking at a profile that this woman might not be a cougar type while she totally was, and vice versa. So just send messages to all the ones you think are bangable.

As for Roissy's point, it's possible that women treat him differently than they would a younger man. They see him as possible relationship material, so they subject him to a bunch of hoops to jump through. Most won't touch a younger guy, but if they do, they know it's about sex. I've never slept with an older woman, but the interactions come much more easily. In gaming online, sub-25 girls are flaky, and the 27-29 year olds are most insecure about their age, at least to me, a 23 year old. I saw that Roissy effect with the 27-29 crowd.
