It's not rocket science. You want to create a ebook then open word, start typing and when you're finished you've got an ebook.
Whether that ebook is of any interest to anyone or you can sell it is a different story all together.
Be sure people actually want what you are selling before wasting time and money creating websites and products first.
If you have a target market in mind (I would advise focusing on something you are interested in and have knowledge on as it's difficult to write with authority and not get bored otherwise) then go do some research (search blogs and forums for what questions people ask and what problems they have) and when you find a problem create a solution in the form of an ebook or video.
You don't need to learn coding, just get a self hosted wordpress blog and a premium theme like Genesis Generate or Thesis. Can have a killer looking website set up by yourself in a few days.

It is exactly what you've asked for..what you want, but not necessarily what you need.

Whilst it does cover what he's asking in a way the niche site duel is more of an SEO contest to see who can rank a site and make the most money in a set period of time. I wouldn't recommend the OP following the method of trying to rank a site on a topic he knows nothing about. Both will be difficult for a newbie. Stick with what you know and avoid SEO to begin with, it's too time consuming with no guarantee these days.

Indeed. I made that mistake when I first started creating products I thought were cool but no one other than me and 4-5 other people needed or wanted. Solving problems that didn't exist.

It's true that you have to be careful who you listen to, there's a lot of self proclaimed gurus out there who either aren't making any money or only make money by selling information to other people on how to make money.
When it comes to following and copying the 'real' gurus it's usually better to copy what they do than follow what they say. If they are doing it then it probably works...if they are saying it then it does not necessarily work but they are saying it you get YOU to do something like buy their product.
The amount of respected marketers who send out emails or write articles saying do this and do that and I notice they are doing none of it themselves. Some are very transparent though and can be trusted, you just have to know who you are dealing with.

What sort of 'organic' traffic are you talking about?
Traffic doesn't come to you, you need to find your audience and get them from wherever they are to where you want them to be.
The corner stone of getting traffic is having incredible content that people can't help but love, going to where your audience is then getting your target audiences eyeballs on that content.
Forget about SEO for traffic for now. Focus on methods that are easier to control and you can do near instantly like content marketing (article syndication / guest blogging), video marketing, social media, forum posting, blog commenting, PPC, banner ads or whatever else works for your site.
