1) criminal assault record
2) bankruptcy/lack of gainful employment
3) willingness to date single mom of three
4) willingness to date woman ten years older than him
5) gymbro lifestyle
6) possible introvert and therefore serial killer

She could have easily gotten some normal banker or insurance type (i.e. beta provider) of guy. She chose the roided-up badboy, maybe to impress her friends. Obviously this situation is an outlier, but one would think at her age having kids already, she'd want stability. Dating in the US for women is a revolving door of every type of possible suitor given the unbalanced ratio.

Yes, kind of the whole point of the OP is that women want to act on their most primitive instincts, and think they can do so without consequences. And then of course they are shocked when things go sideways.
