She didn't win because she earned it. She won because the show -- that focused on an area of market often the target of controversy for promoting body types preferred by gay men -- wanted to demonstrate how hip, open-minded and "accepting" they were.

Is she asian, latino, black or just fat? Is fat an ethnicity? Why would a hippo who wears a mumu and a shower curtain be considered fashionable?

I assumed she was some kind of Eskimo. It's impossible to know for sure when the squishiness of her face distorts any identifiable facial features.

Yes. I think they widened the runway to airplane width to accommodate this belle of the ball.
