I'm 39 and have my age set as 35 on the apps. I'm in shape, have no grey hair, and could conceivably pass for anywhere in the 30s range. I'm matching predominantly with girls in their 30s, and some 26, 27, 28, 29 year olds. My last LTR was 26 and I had told her I was 33 (and never came clean). She never questioned it.

It's not about the age showing. Tinder and all them want "age appropriate" dating so if you have age at, say, 45, it will be impossible to see girls who haven't hit the wall.

Given that displaying your age is the norm on the swipe apps, not displaying would probably look suspicious as fuck, and these chicks are already subconsciously looking for a reason to reject you.

No to this.

They will just assume you are old.
Think about it, what 23-27 year old guy would ever try to hide his age? So if you are hiding it they will think you are older than you look, only exception might be a legit 21 year old guy who is targeting Milf's. In that case the Milfs will assume you are younger than you look and insecure or embarrased about it.
