I'm looking to spend 3-4 weeks (give or take) working in France this summer, and need some input in to what sort of work I should be looking for or could get. I have tried several google searches but the websites given are pretty useless.

I speak pretty good French, although it may have deteriorated slightly by summer 2017. Any location is fine except Paris, Marseille and Lyon.

I don't mind what type of work it is, although public service work is probably not a good idea as my French isn't fluent enough to be able to cope with a fast, dynamic environment. But anything like fruit picking, farming, staying with a family to teach English, those type of low-level jobs are what I'm looking for. If there are any that you think are relatively easy to come by or would be easy for a foreigner to get in to, please let me know.

Another part of the struggle is to find a decent middle-man website to make contact with employers through. This is the bit I most need help with!

Sorry to burst your bubble but "small jobs" for students and summer are way less mainstream in France than in the Anglosphere. Our education is usually quite cheap, so we usually don't have that much loans and few students work outside of school.
For job d'été (summer job) even as a French you need connections otherwise the market is saturated : hundreds of résumés for a single opening. The only time I was connected is the only time in my life I had a summer job. Same for my brother.

So good luck. I would try "job été" on google and maybe target touristic location (typically the beaches) : they have more vacancies for these type of jobs and you being english might be a good point as you speak fluent english.

You can work on organic farms in pretty much any country for a small once per year fee and they host and feed you. This summer I'm gonna do it in portugal. Most likely, you're gonna be way out of any city, so I imagine unless you like the work it would get tedious for extended periods. At least for me, I've worked on a farm occasionally for my friend and I love nothing more than bring outside working the fields. It's so peaceful and you can see the tangible value of your work through whatever you harvest. It's rewarding but not for everyone. I know you're one of the few guys on the forum that's around my age, but you'll be 18 by the summer, right? If so you should definetly be able to do this

If you are in the STEM field and have a decent looking CV, I can prolly link you up. Otherwise, you chances of scoring a decent gig are dismal.

Yeah I expected it to be more saturated, especially with the (relative to UK) high youth unemployment rate.

If I were to look at touristy areas, would this be working at a holiday camp or something like that?

Cheers, yes I'm over the 18 age limit so no need to worry about anything like that, although I don't know what the French's attitude is towards short term work for young workers.

Like for game, be aggressive and have multiple options! Send your CV everywhere and if there are no openings, send it anyway : propose your service by mentioning what you can do. The bold ones always win.
So on the top of my head, try:
-Office du tourisme
-Restaurant
-Bar
-Supermarket
