You've already implied that you might not mean that you're talking to her. Someone on the receiving end might think that you're actually trying to cover your ass by stating something but actively trying to not include them in the group you're putting down

Very is used to imply that something is "exceedingly" more, but my modifying it you're actually diluting the effect. It takes the idea and rather then making a static statement puts it on a sliding scale.

Confidence isn't really that much of an insult in and of itself. It's one of the more positive terms that could be used to describe a behaviour. Cocky, or arrogant would say basically the same thing but its connotation is much more negative.
