So I called up my girlfriend on her mobile and she answers and i can hear her phone ringing from home. She says to me "hey can i call you on your phone" and then hangs up and calls me back straight away. She says it was weird how her home and mobile phone and my phone were ringing at the same time. What does this mean? Why did she need to check

The way you described it, I don't think it means anything. She wanted to pick up the home phone to find out who was calling, and out of politeness she called you back instead of making you 'call back in 5 minutes'.
