I've been getting this line through text so much it's not even funny. I meet the girls in person and text them a few days later but they keep telling me that I can come hang out with their girlfriends AND guy friends. I really don't want this at all, I just want a 1 on 1 date.

That would already be a fantastic achievement in my location, where girls appear to flake at 99,99% rate, so don't whine about your situation.
I just don't like the framing of such a text, so I would reply along the lines of "That's very kind of you. I will come if you invite me". Basically you don't want to be a puppy dog that's allowed to come along, you want them to say instead "hey would you like to come with us?"

I have no trouble saying no but Im just wondering what I'm doing wrong during the initial conversation. Does she see me as a friend or something? Should I be more direct ?

Call her out, but without sounding butt-hurt.

I usually try something along the lines of 'three's a crowd, don't tell me you're afraid of me?' and try to make yourself sound shocked and hurt but in a joking way.

This lets you know where you stand. If she destines you to be an orbiter then it's 'delete contact' ASAP, if she's genuinely interested she'll want to meet you 1 to 1.

Sometimes you play your cards right in the initial conversation and they still don't bite - that's the law of the jungle.

I wouldn't really sweat it unless you keep getting this in an absolute platonic sense.
Just show up, make a little small talk, then isolate your girl. Standard house party game.

It'd be easier to isolate in a bar than at the mall, for example.

Sounds like a young girl issue. Are these girls young/18-22?

A) She's insecure & dependent on her friends.
B) Your game is so good that she feels she's in danger of being fucked if she's alone with you. (If your game is in fact that good, isolating won't be an issue. Extracting too if you work that shit.)
C) You're going after party girls who only leave the home to party or to prepare for a party.
D) You're game was only just okay, and she thinks you'd be a cool friend to add to that growing social circle.
E) You were "entertaining guy" and she wants you to dance for her social circle.
F) You're gaming in an area with high sexual assault/rape rates.
G) You're gaming in an area with a high beta/chode population, and you're not doing anything to set yourself apart, like: being direct,physical, or showing intent.

Any of these sound correct? Let's identify the issue.

This particular girl is 24yo!! I'm much younger than her though, maybe thats why.

I'm a noob in Game so I think option D (and A) applies here.

Take the opportunity. You never know who her friends are. You never know who you might meet.

They might be hot or maybe if it's a male it could be beneficial to have him as a connection. I've met many important people this way.
